Preparation
1. Preparing the meat:
• Flatten the cutlets so they are very thin and wide. To do this, place them between two sheets of cling film or parchment paper and pound them with a rolling pin or the bottom of a saucepan.
• Season both sides with salt and pepper.
2. Filling:
• Place a slice of ham on each cutlet (fold it so it doesn’t stick out).
• Add a slice of cheese (or two for those with a sweet tooth) to the center.
• Fold the escalope in half to form a turnover. The ham and cheese should be completely enclosed. If needed, you can secure the edges with toothpicks (don’t forget to remove them after cooking!).
3. Breading (English style):
• Prepare three shallow bowls: one with flour, one with beaten eggs (seasoned with salt and pepper), and one with breadcrumbs.
